Yeah that could work but tbh by far the most effective way of doing it would be to use a battery for your energy storage, rather than the caps. That way you can store a worthwhile amount of energy.
That however still leaves you with the issue of getting drive back from the motor to the cars drive train (using the auxilliary drive system really won't work).

Still haven't had time to do any proper research yet so maybe there is a suitable battery i dont know about.

I don't see why you can't use the ac drive belt or similar (remove the compressor) to add power. The belts themselves can already transmit a significant amount of power to the power steering pump and alternator, and in effect the DIY kers system is unlikely to provide more power than these two items combined, so if anything when the DIY Kers was activated you'd just negate these parasitic losses.
