Perhaos he has been put off with the abundance of them or with getting rid of the bad parts of the vegetables e.g. worm eaten, goo-ey bits etc.? Or, perhaps his unconscious mind also bears a very strong reluctance for vegetable intake; possibly, due to his learnt family habits?

I know a butcher who won't eat meat because his brain has adversely lodged the blood, skinning and the gutting he has to deal with.

Such binging or grazing habits are often family learnt habits as well, where, ironically, the impulse is in control of the individual. Unconscious binge eating may have some underlying reasons, which one can make an effort to sort; with or without others' help.

Probably that i'd say
That customer in particular supplies another customer of mine with "cleaned up" fresh produce.
I commented on how much stuff they cut off before using the ingredient in a finished product.

He just told me that you should see the state of it when they first get it.
