If you have a kettle-type grill that lets you control the airflow, try making a fire of nothing but nice wood like apple or maple. Let the wood light well, then start to choke it down. Keep the smoke at just a whisper, cook the food slower than you would if you were grilling.

LOL @ Yoza - a fellow BBQ exile. We are not alone.

Suggestion - major European Scooby meet at STI Frenchie's for a mega BBQ?

Trout fillets in metal grid clamp thingy that hold it together sprinkled with some cajun spices. Don't forget sweetcorn - golden and sweet absolutely delicious. Also, vegetable kebabs including peppers, onions, mushrooms even tomatoes. Must try that duck!

Yeah, was just going to suggest a similar thing: salmon steaks wrapped in foil with butter and herbs, cook beautifully and don't fall apart. YUMMMEEEEE
