Maybe the word 'HER' was a clue, sometimes sluggish and wont play and other times goes like the clappers, sound familiar ?
I suspect the factors are
Your mood
Air Temp
Air Density
Humidity
Ambient Temp
Quality of fuel used
Electronic (ECU) goings on
When you last drove the car
What you last drove, Scoob will feel Mega after the firms Diesel Non Turbo Vectra.
Whats on the radio/cd player
Whether you got a leg over last night
Your Mojo

What about handling? Sometimes my car feels like a bag of slippy slidy spanners, other days on the same stretch of road the back end won't budge and the thing is on rails

Other things that seem to change at random:
Smoothness (Everything is smooth, engine, gear changes, steering, exhaust, induction noise)
Noises that you've never heard before (****, what was that? or I hope it's the car infront making that ticking/clicking/whirring noise)
Turbo lag(C'mon, let's be having you as opposed to BLOODY HELL!! That was quick. Same junction as yesterday)
Idle speed( Not erratic up and down stuff, just today 800rpm tomorrow 900)
"Comfortable" cruising speeds (90 one day, noisy uncomfortable 75 80 the next)
Exhaust noise (OOOOHHHH! That's nice one day to Bloody hell that sounds like it's tinny and blowing the next)
I'm liking the **** Dyno theory sofar
