It is right IMO to provide food that doesnt contain pork for muslim visitors. The problem here is that they went too far and their will to please the foreigners affects the locals' food choice.
Sure, it's not that much of a deal to have to eat something else but pork for a week or so (I have not eaten pork in months, dont like it that much), but the decision is wrong in principle. You dont give up your culture for a week to please a muslim. Be assured that they would never do this for you.

I am all for providing an alternative option for somebody who does not want / like / approve of the options provided for the majority, however, to prevent the majority from having what they like because of a single individual is ridiculous.

I think it's good manners to accomodate your guests, but poor form to abandon your own culture for theirs just in case you might perhaps offend them.

Now I agree that arranging a nice hog roast for a Muslim (or Jewish) visitor would be in pretty poor taste, however, I still don't see why pork had to be removed from the menu for everybody else. It's all very "little Johnny doesn't like playing football so none of you can".
Would beef be removed from a menu in Pakistani for a visiting Hindu? Would anything be removed from the menu in China for a visiting anybody?? I doubt it, but I would hope that as a host you ensure that there is something available for your guests to eat that meets with their needs whatever that may be.
