Slice some potatoes (pref. red ones) into 1cm thick discs. Boil until just starting to soften and then drain.
Heat some olive oil in a frying pan, add some crushed garlic and the potatoes and lightly fry them.
While they are browning, put some pasta on - linguine or tagliatelle is good, and maybe some green beans which you can chuck in with the potatoes once they're softened.
When the pasta's done, drain it and mix in generous, equal amounts of good pesto and good quality natural yoghurt, and grate in some Parmaggiano, then finally chuck in the potatoes and beans and mix.
Easy. Pasta AND potatoes in one dish, an idea from Liguria I believe.

Thai Green/Red/Penang Curry
Warm a drop of coconut or groundnut oil in a wok. Add 1/2 sachet (about 2-3 rounded tsp) of the appropriate Thai Green/Red/Penang Curry Paste (from chinese supermarket) and warm through. Open a tin of Coconut Milk add just a bit at first and mix into the paste. Add the remainder and heat through without boiling.
Add 1 tsp of chopped lemongrass, 1 tsp of ground Star Anise, 1 handfull of fresh basil, chopped (thai sweet basil preferably- you can also get this in a jar) and a dash of Fish Sauce.
Slice a Green/Red/Birdseye chilli (or more to taste), then wash your hands, thoroughly!
add to wok. Add 1-2 tsb brown sugar (Muskavado if you have it) to taste.
Boil a large saucepan of unsalted water and add Thai Fragrant Rice - cook as directed on packet.

simple meal, Andy style.
to start:
get a bag of king prawns from the monger
small rammequin of sweet chilli sauce
slices of avacado
(2mins to prep, cheesy and obvious but luverly)
For main:
Steak (sirloin for me but personal pref.)
cauliflower (boiled for 10 minutes), asda four cheese sauce draped over it and in thew oven for another 10 minutes (grill to brown top)
potatoes, boiled jersey new, when done empty water, add 4 tbl spoons of EV olive oil, a hand full of fresh dill and squeeze in the juice from two lemons.
bubble and brown till smells loverly.
To finish:
greek style natural yoghurt, fresh blueberries and a drizzle of golden honey across the top (also stops blueberries fukcin off the plate when you carry it in
)
easy peasy, total of 20 mins tops and you can do the start and desert before hand.
cost about £8

I really like this duck dish:
duck breasts, 1 per person
some morello cherry jam
cheapo red plonk
asparagus spears
baby sweetcorn
potatoes of choice
Pan fry the duck breasts skin side down for a few minutes until the skin is crispy (spatters a bit, lots of fat oozing out) then turn over and cook reverse. Stick in oven while you prepare the sauce and other bits.
Empty 1/2 jar of the jam, or 1 small jar (must be high fruit content) into a saucepan, heat gently then add some red plonk and simmer until it reduces. Don't let it go too far or else you'll end up with a toffee consistency - never done that myself BTW![Roll Eyes (Sarcastic)](images/smilies/rolleyes.gif)
Cook potatoes and sweetcorn in normal preferred way. Take asparagus spears and boil for a few minutes. Take off the boil and plunge into iced water, (keeps colour apparently) and heat up a griddle pan or George Foreman. Stick asparagus spears on heated griddle pan and brush lightly with butter. Add salt and pepper to taste and try and get all sides with brown stripes. (Easier said than done!)
Stick all the stuff on a plate and serve.
The sweet cherry flavour is great. You could also brush the duck breast skin with a bit of the jam before sticking in the oven too. Is luverly.

My lifetime fave by far:
1 can of heinz spaggetti, heat gently, don't let it boil. Grate lots of seriously strong cheddar cheese (the sort that crumbles when you touch it
) into the bowl, stirring as you go.
DONT BOIL IT. just let it simmer for a while, until the cheese is melted in.
Add a **** of butter, s&p to taste.

had this today,
NICKED it from campbells soup
boil pasta and some veg (broc carrots etc) (10mins)
cook cubed chicken and some onions. add 1 tin of campbell chick soup
add a little water.
pour in pasta and veg, simmer, and serve,
it should take upto 13mins
(ps i grilled my chick first, lean mean fat killing machine)

Sesame Chicken Noodles
Heat wok or large frying pan and a medium saucepan of water.
Dice Chicken Breast or Thigh Fillets into bite sized cubes or thin strips, discarding any fat.
Chop Mushrooms to similar size.
Put 1 tbsp Sesame Oil into wok, it should be hot enough to just start smoking.
Add Chicken and stir fry to colour quickly on all sides, reduce heat a little.
Add Mushrooms to wok and stir in.
You can add other veggies if you like, Chinese Bok Choi is best![Smile](images/smilies/smile.gif)
When water in saucepan is boiling add Medium Noodles and a dash of Sesame Oil and simmer for 3 mins.
Add a little Oyster Sauce to the wok and stir in, you only need a bit. For that extra special touch you can also throw in a handfull of Fresh Basil leaves.
Drain noodles in sieve, put sieve back inside the saucepan and sprinkle sesame oil over the hot noodles, toss.
Serve with a glass or few of chilled Chardonnay

add pepper to pan and fry for a further few minutes

let chicken brown off, whilst chicken browning open one tin of plum tomatoes put in blender, chop 2-3 cloves of garlic and add to blender, chop 1 chilli and also add this to blender blend together then add to browned chicken,
let it all simmer in pan until its boiled down to a thicker consistancy.
whilst thickening take 1 small tub of double cream place in bowl and whisk until thick, add another chopped chill to cream and mix in.
open packet of tortilla wraps and place one on a plate microwave for 15-30 seconds then add one dollop of creme fresh and one dollop of the chill cream, spead out onto wrap and add a nice dollop of the chicken mixture, wrap up and enjoy!
