So, just going back to the start of this thread and the battery drain issue...
Is it just a case of removing the original Subaru double din unit and plugging the Pioneer in, or do I need to do some weird wiring to stop it from draining my battery or losing all of its memories?

It just plugs straight in - my battery drain issue was merely coincidental and not related to the head unit.
It has been fitted using an ISO/Scoob adapter - works great.
I have uncovered a problem with the Sony P910i though which is not great. When I answer most calls it crashes the BT connection. Making calls is fine though.
Works fine with a K700i though.
I contacted Sony and they kind of admitted it and said there was nothing they could do.
