I work for a dealer, taking pictures and advertising them on the internet... so I drive a wide range of different cars. I think what would best suit you is an 1995-2001 audi a4 saloon or avant(estate), very smooth engines, reliable, very well built, good handling and even more so for the quattro models.
If we give an example on prices around the year 96-98 with average mileage
1.9 TDI(115ps) FWD = (51mpg) or Quattro/4wd version = (47mpg) £2-4k
2.5 TDI FWD = (40mpg) or Quattro/4wd version = (35mpg) £3-6k
1.8 T sport FWD = (34mpg) £2-4k
I would probably pay a little extra and go for the 2.5 TDI quattro, alot of grunt, and you cant miss out on the 4wd can you now

Skoda used VAG's small car platform first but it would not be correct to say the Polo and Ibiza platforms were taken from a Skoda.
They were all planned to use the same platform but it's just who gets them first.
