or, coat one side of the toast (untoasted side) with a mix of tomato sauce and chilli powder and maybe a bit of cayenne pepper, place cheese on top, and then do a fine sprinkling of cumin powder on top of the cheese and cook.

We have some fresh garlic paste that is lovely spread on the warm untoasted side before adding the cheese
