For the Starter....
King prawns, uncooked, biggest you can get.
About 30 for 4 people (it's just a snack)
Chop up (finely) about 8 finger chillies, (the hot fvckers!!)
Chop up/mulsh about 7 cloves of garlic
Mix in with the prawns
Add some chilli sauce (to aid the blend process)
Leave in fridge for as long as you can
Take out, put on a cheap frying pan on the BBQ, turn prawns for about 3-4 mins, ensure cooked, set on a platter, eat.
Ensure plenty of cold beer is available to cool the mouth.
For main course....
Read everyone elses comments
For dessert...
1 apple per person, skinned, cored and sliced into eighths
Brown sugar
Butter
Brandy
Place frying pan on BBQ, add a fair bit of butter
Add lods of brown sugar
Stir
Butter & sugar will turn caremely (Brown-ish)
Add apples
Stir
Add brandy, (sh1tloads of it!!)
Tip frying pan slightly (jerk it) so the brandy sets alight, gives a blue flame over the apples
Allow flame to go out, keep stirring until apples are slightly soft, a bit al-dente
Serve with vanilla ice cream
Fvcking lush !!!!
I do this for nearly every BBQ, never fails to please.

Asparagus - butter and garlic, wrap in foil, cook for 10 mins, then a quick final fire on the grill to add the nice char lines and add a bit of extra flavour!

Some wonderful ideas and a lot which I'll be trying out. Thanks for all your help folks -- I don't think I'll need to see another baked potato until the end of the barbeque season in September

Storm blew in on Friday night which cancelled the BBQ so we did it last night. A BIG for the corn on the cob with the chilli and coriander butter that went down a treat! Will try some more of your suggestions this coming week. Cheers!

We tend to make a variety of pasta salads (eg with green beans and shreds of bacon), rice salads, and garlic bread. No complaints. Pitta bread is also simple, can be served with hummus, tsatziki(?) (yoghurt cucumber and garlic), or of course the kebabs.
Nice tip is pre-make some chocolate brownies for dessert. Usually all cutlery and crockery is used by then, and the guests are pretty stuffed, so they're ideal to finish the meal simply.
