What health risks?? You don't drink the brine do you.

And you wont taste any salt as the bird is thouroughly rinsed out before cooking.

So what is the point of the sugar, peppercorns, onions and herbs than if you are not going to taste them?

Also, you should not put stuffing inside the bird as it increases the cooking time and increases the risk of bacteria coming on to the plate.

Come around for dinner and you'll see why. Or are you content to be sitting down and eating your Bernard Mattehes turkey roast.

Stuffing the cavity is not a problem at all.

How do you cook 'pigs in blankets'? Do you cook the sausages first or are they made raw and roasted with the turkey?

I'm having chicken. If turkey tasted any good people would eat it all year round and you wouldn't have to smother it in a pound of salt to make it palatable.
