If you're not going up mountains, just muddy paths and towpaths then you might want to consider something from Halfords. I kid you not - Mrs had a Carrera Kraken at about £300 a couple of years ago and despite the frame being a little on the weighty side she's taken it off-road quite a lot:
Features and Benefits
Lightweight 18" 7005 aluminium frame with double butted 3 main tubes
Suntour XCR 100mm travel fork with lock out and rebound damping
SRAM SX5 27 speed gearing with trigger shiftrers
Powerful Tektro IO disc brakes
Truvativ Isoflow chainset with Powerspline bottom bracket
DDM1 disc specific rims with Tioga Factory Extreme tyres
Cheers

I was in the same position myself
Tried a few, spoke to a local bike shop and ended up buying one of these

For general riding the Kraken is a bargain at the moment. The usaul price is £400 but Halfords have £100 pounds off it at the moment and it's one hell of a bike for £299.

Goes against what I have said above as you can't test a bike from wiggle, however if it's the wrong size you can send it back...May be £20 over budget but bloody good spec for the money.....

Best buy I made last year - Endura shorts.
Baggy on the outside with pockets but they have a detachable, padded lining. Essential when going off-road unless you like walking like John Wayne

Recently got a Stumpjumper Comp and a Globe IG8 (hybrid) under the Cycle 2 Work scheme (ahem - we for ourselves work from home!).
Both fantastic - A lifelong Specialized fan (have a 1997 Stumpy too).
Devil - That Scott is a bargain!

I had the cyclescheme thing at my work. It's brilliant! more than 40% of the workforce took it up!
It's worth noting that you are limited to retailers that are members and you may find that they wont be overly keen to do bikes that are discounted as the cyclescheme takes their cut off the price too.
Paul.

As I understand it your employer provides the finances and owns the bike throughout the loan period. From what I can see their is no money lost by a retailer - they just accept a different payment format in the form of the Cyclescheme Vouchers? Or am I missing something as really want to know what Im letting myself in for.
Only prob for me seems to be that my company only runs it april-may each year (not sure if this is standard or just my work) which is annoying as nearly 6 months away. Still plenty of time to do some research I guess.
I like the Kona and Specialized bikes (kona more so) aesthetically and they both seem to use good components. Hayes Hydraulic brakes seems to get better write ups from what Ive seen so far.
Just need to get my *** in gear this weekend and go try some bikes

Having spoken to the bike shop it costs them to join the cyclescheme network. I'm not sure how much but there is a cost involved. Thereafter Cyclescheme takes 5 or 10% (can't remember how much exactly) of the voucher price cutting in to the profit margins already hence some retailers not being so keen to include 'sale' bikes in the cyclescheme.
You're right, the employer does indeed own the bike and you're really just leasing it with the option to buy at the end of the year. My employer has put a 5% buy out on it but I know that some don't bother with any final payment at all.
There is nothing untoward with the scheme and when it comes around again at work (like you it only covers 1 month per year) I'll be adding to my stable much to the dismay of the wife.

So far I like the Specialized Rockhopper Disc '08 and the Kona CinderCone '08. Just gotta sort out some proper test rides.
