Butlins at Minehead. Seriously....a great place.
To be fair I'd proably see if I could spend the money better elsewhere, house, decorating etc and spend less on my hols.

We did St Lucia for 2 weeks but we did pay more than your budget is now (8 years ago) though it might be cheaper now.

Mexico - Excellence Riviera Cancun..... so good I've been twice in the last 12 months!
Excellence Cancun Resort and Spa
I've stayed in some fantastic hotels, all over the place, and this is the only hotel that I've been back to (on holiday, not counting business). It's fantastic... Latest trip we had a 'swim up' room, two jacuzzis (one inside, one outside), hammock, 5 yards to the pool from the room, marble everywhere, etc. etc. Food is fantastic - not had a dodgy stomach on either trip (as opposed to reports of it all the time if you go elsewhere in the Carib - say Dom Repub).
Second time back I didn't really want to go back to EXACTLY the same place again, but I couldn't find anything better (or even as good as) this place anywhere in the Caribbean (other than for silly money)... and neither could the travel agents that I spoke with.

We did Bora Bora for ours.....it was great and somewhere we are unlikely to go for a while!
Our itinerary was:
Heathrow - San Francisco

as above at the moment im looking at an all enclusive hotel in mexico with upgraded flights for two weeks but im woundering what advice the all knowing scoobynet has to offer !! looking to fly the end of may !! here were im thinking of going

Id go to Club Rockley,Barbados has its own 18 hole golf course on site if thats your bag and a private beach with a bar on it for those free thirst quenchers and the beaches are mind blowing

Hawaii but only Kauai the most northern island as its very under populated/ commercialised compared with many of the others. Its stunning.
I've just come back from a month there and it was beautiful and soooo chilled out. We went windsurfing, surfing, snorkelling (saw large eels, giant turtles, whales etc) Helicopter ride over the island and saw where they filmed Jurrasic Park, all with stunning weather and scenary.
Just be wary of the sea, in the last week the waves were 25foot on the north shore!!!
Depending upon where you stay all that would be poss on your budget I'm guessing.
