Someone's been watching The Apprentice Maybe you mean 100%.
No need for a flame suit here, we're all grown ups I agree 100% with you, I always want someone working on my car who is both capable and experienced, hence why the guy at work does my servicing. He's clued up enough to tighten my handbrake cable without me asking (actually done this too)
Unless you're running £100,000 plus sports cars there's really no reason to have a specialist check your brake pads etc.
Incidently, my mate doesn't stop the service halfway to call to tell me my perfectly ok front discs and pads need chaning for £350+ either .
Others prefer a full and documented history for resale or some sort of piece of mind. Nobody is faulting that, but for me this is pointless and expensive.
Obviously diagnostics, fault finding, tuning etc a specialist may be a wise port of call. However, I get the feeling 'specialists' love the fact some Impreza owners believe the hype surrounding regular mundane servicing work. Let's face it, it is hype!

I work alongside mechanics. They usually look after Heavy and specialist vehicles but also landrovers and do private work on 'normal' cars. This ranges from cambelts/tyre changes/brakes/exhausts etc. I would not want them doing my 30k/3yr service. Simple as that. I want someone who knows and understands Subarus, whether that be a dealer or specialist. I am an engineer, I can quite easily do the brakes/exhaust/oil/air filters etc but I would rather pay someone to do it for not only piece of mind but to have a receipt to show the potentially new owner
