The vids are interesting for various reasons.
As mentioned above, it says their shops will be open from 8am on the 11th, as it's US that could be 8am EST, which would be around 1pm GMT. Maybe Apple will be nice to everyone and let it happen at local time, in which case we'll have Oz cousins getting their iPhones way before the US.
You are quite right, no mention of unbricking the iPhone in store, which I'd have thought they would have mentioned.
The price of an upgrade ineligible 8GB 3G is $399, so that's an extra $200, so the 16GB would probably be $499. It seemed to indicate that there wasn't any additional fee in this either, and again, I'd have expected it to be mentioned as they mentioned the $18 upgrade fee if you're an existing and upgrade eligible customer.
I mention this as it would be nice if Rogers copied this idea as $499 would be better than $299 for the phone, plus $400 for the early cancelation fee, plus applicable taxes of course.
