The point im trying to make is that globals etc aren't as good as people think, you are paying for just a name not to mention their handles imo are a recipe for disaster.

If you want to pay well over the odds for what i feel is an inferior knife then go for it.

As for the locking thumb thing, it'll hurt to use the thing in the end, too risky imo.

Do you use knives as a trade for countless years?
It was around £50 IIRC. Well worth it as it will, hopefully, last a lifetime.

Saxo Boy is correct, most people don't need anything too special but I think a good knife is worth a few quid.

I don't give a fvck what other people think. It's my kitchen and as I work from home I'm in it many times a day. I don't like black handled knives as they wouldn't go with my kitchen. Fvck it, I'll take a picture....

Please ignore the state of the place, you can see the chicken is out defrosting already

Anyway, all of my kitchen equipment has the brushed steel look. The globals go nicely with the salt and pepper grinders and tea/coffee/sugar tins that are in the same area and compliments the brushed steel look of the toaster in the opposite corner. It's not about vanity it's just that I like the look of them in the kitchen and as a bonus they do everything I ask of them with utter ease. This is the point I'm trying to make to you - you have spent many years in the trade cutting up whole animals day in and day out and need knives for that purpose. Tonight I'll be cutting up some chicken breasts and entertaining for 8 and I need equipment suitable for that purpose. We are at different ends of the spectrum here!

Yeah i know what your are tryingt o say, i just can't fathom why people want to pay over the odds for such knives, though a chrome set would look much better and go well with your toaster etc i can imagine such a set either to be cheap or hard to get hold of.

Still a black/chrome set would go well with your worktop and your utennsils, much like the dick set i posted.

mmm chicken

Believe it or not nothing in the kitchen is chrome. It's all brushed steel but the flash does make the toaster look far brighter than the rest of the metals. I had always wanted the clean look of an all-in-one metal knife (i.e. with no separate handle material) and when I saw the globals in John Lewis I fell in love so they went on the gift list. Put is this way.....it wasn't me that paid over the odds

But since you are here and I need your expertise hux I'm looking for a multi-purpose knife that either comes with a protective sleeve or would fit a standard sized one - or folds in on itself. The knife will generally be used on boats in the summer when I go fishing and must be ideal for chopping fish heads off and gutting them (therefore it needs to go through bone). It needs to be very sharp, tough and able to handle the odd curveball such as cutting rope or such like from time to time. It must also be able to handle the fact that it's only 'cleaning' will be a quick swish in the sea and a wipe with an old rag.

Recommendations please...

Well thing is to me a knife is just for practical uses, not to tart up a kitchen but each to their own, im sure if you looked around you would find a set much more pleasing and useful, global aren't the be and end all of knives.

A knife choice eh hmm, ok i'll have a look around and see what i can think of as well.

Yeah, the old guy with very large, sharp knives who knows how to effectively chop a carcass into it's component parts - not picking, honest!!

So - for the second time of asking, anybody used ceramic?

Haha you think that's bad im trained to use a 44" katana from my aikido days.

Japanese Swords, Samurai Swords, Samurai Katana, Japanese Wakizashi, Japanese Weapons

Never seen or used a ceramic knife, ive heard that they either can't be sharpened or have to be specially done, but they are rather gorgeous.

Oddly kyocera make cameras

Ok saxo, ive found a knife oddly from the bugei site ive posted, it's forged and coated to build to last and can lock out and be folded away when needed to be.

It won't fillet a fish but you need an alltogether different knife for that and it would be too fragile for everyday use nor cutting through bone.

Hissatsu Folder

I will keep an eye out for any other potential knives just incase.

That looks like just the ticket - the perfect shape and size of knife for the application. I don't need to fillet the fish and IIRC from watching my great grandfather do it you need a thin and flexible knife to do it. I don't have the skill and would end up with a world of bone in my meal Besides when the fish goes from sea to pan in less than an hour the meat just falls off the bone when you touch it with your fork so no need to fillet. MMMMMMmmmmmm!

talking of which, I watched Hugh Fearnley Whittingstall do exactly that on a recent River Cottage episode, where he's out at sea preparing a dinner for some trawlermen - you actually see him slice through his nail! I couldn't believe how sharp his knives were!
