But to be honest, I'll eat almost any type of biscuit, not keen on rich tea though far too ordinary, and they go far too soggy when dunked. The structural integrity of a biscuit is extremely important, and some are better suited to coffee dunking that tea dunking. Also the temperature of the dunking fluid also has a big effect on structural rigidity and flavour. For example, try dunking a malted milk in each of the following for say two seconds,cold milk, hot milk, tea, black coffee and white coffee and see the difference. I'm sure there must be a whole science degree in biscuit based fluid dynamics.
