Story of my life. 
Cake was rather nice, light and fluffy and minty thanks to the peppermint oil, i think using self rasing might have helped, but still rather impressive seeing how quick it was thrown together.
I was thinking of putting a frozen dollop of nutella inside so when cooked you get a lovely gooey chocolate centre yum!!
