Two main reasons;
1) Allows you to unlock the iPhone from O2, so you can use it on whatever network you want
2) Ability to add/modify the phone in ways that are normally locked by using third party applications. For example, you can set a wallpaper that shows behind all your app icons, and you can change the style of the app icons. Basically customizing the phone more than Apple allows.

I can appreciate why Apple wouldn't want to support full blown Flash as it's evolving into quite a comprehensive product, capable of running user generated applications and games without Apple's approval.

I've not given it a try, plus it's still beta, so there will be bugs in it, and from what I can tell, it's just for videos, so a site that uses flash for navigation simply won't work.
