Knifing people tyres isn't covered by insurance and therefore they would have to buy new ones at thier own expense. Not that I would advise this behavior but an eye for an eye and all that.

She is totally in the wrong and you should be able to claim for the damage.

Should one let someone's tyres down, it is worth doing it by unscrewing the valve cores completely so that they have to get some more to be able to pump the tyres up again. Leave the valve cores by the car but not too easy to see. Definitely a wrong move to damage her car in any way.
