FFS it is a £1600 watch that he doesnt want and knows his mother cant really afford it!
I think you are stuck between a rock and a hard place here Ali but i think i would go with taking it back and choosing a really nice new watch that you want and spending the rest on something she likes (if your mum is adamant about not taking the rest back).
I do think £1600 is to much to spend on a present without really knowing if the person really wants it!
