OK, I didn't get to speak to the Sergeant, but the Officer I did speak to was very helpful and told me as much as he could.
I still think the "animal" line is to put my mind at rest.
We shall see

Long story short:
We were taking the dog for a walk tonight and took a jaunt through the forest. This takes in part of the Coast to Coast cycle route.
Crossing over the bridge, our dog (a GSD) got a bit snarly. Moved on and spotted a pool of fresh blood in the snow. Two steps on, another pool. Both about the size of a human head. We proceeded further down the track following drops of blood on the way. The track then splits and another big pool of blood. The dog was making little bark noises by this time so we quick marched back up the track to the bridge and called the Police.
They were there within 10 minutes and checked out the blood, called for back up and the Dog Squad.
They took our details and told us to take our dog home as the Police dog was on its way.
Heard nothing more.
Now I am chewed to bits incase it was an injured cyclist/ stab victim or just an animal.
