Heston reckoned these were the best, but I have to say I prefer King Edwards. Usually just boil them for 7 minutes, drain, hold them above the heat for a few seconds to dry off the steam, give them a good shake, and then put the tin with the hot goose fat over the heat, and tip the potatoes in, rolling them in the hot fat to coat them.
