Sold as seen, no comeback as far as I can see. Just tell him that he should have HPI'd it himself, it was his responsibility.

he is prob talking **** to try and get more money out of you come across ***** like this before make sure he sends you your log book if not apply for it he sounds dodgy as **** to me hpi your old car your self bet its not a cat c

I would apologise and move on, you're obviously not out to rip people off and at the end of the day the car is sold as seen ...
The only issue you may have is the car is not declared on the V5 as Cat C, I dont know if this makes it a bit iffy ?

OP if you knew about the car being a cat c then you are liable to pay the extra cash as you have to disclose if the car is a cat d/c/b/a, if you didnt know then your a little silly not HPi'ing it and so is the new owner, but he should have done a hpi check end of.
