The clock is hopelessly inaccurate - the needle on mine was pointing straight down and way off the end of the 160mph mark when I was doing a GPS 164mph.
Steven 191mph in 1km LOL - mad car

To start with, who was the expert you took the car to?
Your engine came out of a 1996 v2 STI, CDB's were lucky to be found in 1995 models, they were normally found in MY93/94 cars, they were discontinued after that with the exception of the original STI RA's in 1995.
The internals suck on that engine, really they do, they will let go and punch a nice hole in the side of your block ive seen it with well maintained classics running less power than yours, the rods are a BIG weak spot, they just let go without warning, they were updated in the new age cars, but 350bhp is deemed to be "top end" on a good classic engine, but they still fail before that
V3 STI's were the first proper red top engines, not all v2 STI's were red top, it was like a pick n mix, some did and some didnt, the version 3 has better pistons than the v2 and original STI, its also more agresssive as thats how the cams are on that model, the v5/v6 are deemed to be the best but they have a very agressive map.
It was also a version 4 4 door car that set the fastest (at the time) production saloon over 1/4 mile against an M5 which BMW were saying was the fastest
Now, tell me all I will point you in the direction of a proper speciallist and a decent mapper who can check your car over and not just say its running well when they change the clutch

You need a bit more education

Good, though still get it checked by a pro/speciallist as they will be able to pick up any det etc
Is the paint job an after market jobbie or just a bit old/original? If it either you could always try Michael (he is Polishing Booth on the LADS site), he has done some wonders with cr@p paint work or just google the above name

1100kg ????
My car is stripped out. No carpets, no sound proofing, air con removed, spare wheel and tools gone, lightweight wheels, no spoiler, heavy old manifold replaced with lighter S/S, etc etc etc. Basically anything not needed is gone, even down to brackets in the engine bay.
When I weighed mine with 1/4 tank of fuel it came in at 1160KG. I do have some bits that are heavier than standard items, brakes for instance.
