Builder's poor workmanship - any legal redress?

I will never, ever, ever, ever in ten thousand years use this guy again. He had more of less finished what he came to do and I had others finish some minor stuff or did it myself. No it was not a cheap job. I paid a very fair rate for him and a labourer and a contribution for their b/b accomodation when they were here and away from home. d

Sorry to hear about your problems. Tbh most home owners have made this kind of mistake before, you are not alone.
I made a very expensive mistake like this once and it cost me about £3k which I will never get back. Funnily enough just like you it was inappropriate tiles for a shallow slope.
This is not really advice to you but anybody else who is reading this. After that experience I have never let anybody do anything to my property until I have fully understood how it should be done.
I'm having quite a lot of work done on my house at the moment and I've spent days and days reading up about everything. It is time well spent no matter how busy you are. Though I can't hammer a nail straight I can tell you everything from steel costs, foundation requirements, insulation requirements etc etc.
