I find it is down to where the pedals are.
My pedals are set up specifically for heal and toe in my subaru.

But in may other cars I find it difficult to get my feet accross both pedals at the same time so often end up not bothering and I am never going quick enough to have to get the car that well balanced anyway.

You have to take your foot off the brake, so it takes extra time between braking and being ready back on the throttle in the lower gear you selected.
