Depending on what case you have and how you plan to cool the system that should dictate the route you choose, going Sli or Xfrire would restrict the air flow if your using air cooling especially in a small case, Once you start going Xfire/Sli and you then throw in a big air cooler the case soon becomes ram packed with not a lot of space for air to circulate, liquid cooling would be a better option for a xfire/sli setup.
I prefer a single card, i'm using a Sapphire Vapor X HD 7970 3GB at the min, it handles anything you can throw at it, thats paired with an i5 3570k ivybridge CPU. I use a push/pull air cooling set up with a Phanteks PH-TC14PE cooler. Obviously make sure your current PSU can handle a bigger card.

Loads available on eBay..... would be worth going for a few auctions. Appear to be iro £150.00 on BIN, so should be cheaper on auction.
CEX have them in stock for £130 - at least you get a warranty and they're available now.

You never heard of CEX? You been living in a cave. ![Big Grin](images/smilies/biggrin.gif)
They are a high street store that deal in buying gaming hardware/software (amongst other stuff) to sell back on (normally for mega prices).
They have a lot of stock centrally as well as in-store at most major towns across the UK.
