removing dual-boot

got a 98/2000 dual-boot. whats the process of uninstalling 98 so it doesnt come up that dual-boot option screen? im missing something very obvious here

Well there are a lot of questions to be asked...
So you're running 2 OS's (98/2000), presumably installed to either different drives or partitions.
Lets assume you've installed them both onto the same partition under different folders, edit the hidden/readonly boot.ini file, remove the Windows 98 entry. save reboot, should just boot to 2000, then delete your Win98 installation.
If 2000 is on another drive, same thing with the boot.ini, but then you're going to be left with a drive (probably your primary partition) which is redundant, and you'll have to do some jiggery pokery to sort that out, maybe partition magic etc might sort that out, but you'd have to gen up on that.
