but I need a mobile spy phone that I can give to someone
that will let me hear conversations as they happen
and record time date incoming/outgoing number duration of call
and so on

I saw ages ago a company who would convert a Nokia 3210 to do this sort of thing. Basically it had two numbers to call it. One would make it work as normal, the other would not make it ring, but would hook you up with the bug for listening in. It was £2k IIRC.
