Not cooking oil, mineral, or rock oil. It's non-conductive and unlike cooking oil it'll not go mouldy It was done several years ago by someone going for the overclocking record, using a PC submerged in oil that was cooled with liquid nitrogen. It was later beaten by people using liquid nitrogen directly on the processor - including toms hardware.
