3G running 4.1 does not seem to be that much quicker than 3G running 4.0.2, however, our phones are not loaded with many apps, so it's not a real test.
For us, there isn't much in there that has changed, so our apps should be ok on 4.1. 4.2 will be the biggie as it's the multi-tasking update for iPad, and I expect there could be a few gotchas in there.

If I could downgrade back to 3.1.3 I would prefer that over 4.2 - even on my iphone 4. The proximity sensor is doing my head in! (I know this update is due to fix that bug, but I don't want to lose my jailbreak)
