Default Jerky wrx?

Hello!

I am completely new to wrx and the turbo game so I hope it is ok that I ask a few questions. I have a 2001 Impreza Wrx, which seems very good. But it is a couple of things I am wondering. From 0 rpm and up to 2500rpm, it kinda seems jerky sometimes. It goes, but stutters if you know what I mean. I havent driven a turbo before, but maybe the turbo lag is that bad? It is of course worse when its cold. Also when I am at a stop sign, and gives it a few rpm ,it almost jumps down to 0 rpm when i let of the gas. It have actually stopped when I was in traffic cause of this. The engine is all stock, only decat and exhaust. Ive had Honda Type Rs and Celica T sports and other high revving cars, but all of them was much better to drive in low gear and traffic. But like I said, maybe its just me not used to turbo cars.
I am from Norway, so there might be some errors in my english

Thanks!
