I say this as I decat'd this section and thought I'd snapped the sensor but realised that the threaded boss is not fixed very well to the cat and broke off easily. I removed the smooth circular boss off the sensor and refitted the sensor without a problem to the new pipe. This sensor easily unplugs about 8 inches forward of where it fits onto the cat.
got hold of it with a pipe wrench & twisted it in half !will have to get a new one
as the car is running like a bag of nails

It could be the cat overheat sensor (much smaller then the other sensor) and you can get away with not having this attached, you will need a little resistor to plug in the socket on part of the wiring loom though to stop the light on the dash from coming on. I believe a 2.2Kohm resistor would be the right one to use.
If however it is the Lambda Sensor,(the more chunky of the two) then you will need to get another one.
Spanner size wise to differentiate (sp?) the two, the cat on fire / cat overheat sensor is about a 14mm spanner and the Lambda sensor is a 22mm spanner.

As I mapped your car on an Apexi the sensor is not used anyway.
As long as the Lambda is fitted and plugged into the top of the downpipe then this is all you need.
I am hoping to get over to you this weekend for a map check up with the new exhaust on, I wouldn't expect it to drive as differently as you suggest it does, just perhaps needing a little extra fuel when coming on and on boost.
Are you sure you haven't left a pipe off or knocked a vacumm pipe off when you removed the intercooler for example?
