Does anyone supply such a thing for routine maintenance, ie such as Haynes, Bentley etc.

As I'm planning to change all discs, pads and oil etc and wanted torques etc.

Unfortunately not, nobody such as Haynes does anything like that for the Impreza. Too much of a niche model. Although there is a book which is more of an ownership manual (ie talks about the different models and the history of the car).

i picked this up from my local halfords for £20.

it's reasonable, not too much detail on the turbo but ideal for torque settings and the like.
