Default Cooling probs

My neighbour has got a 2001 bugeye wrx with 110,000 miles on it. It seems to be loosing coolant and running hot, but then cooling down again when the fans kick in, but then running hot again (upto the red on the temp guage) untill the fans kick in and cools right down. The rad has been changed, because the old one was split and a new thermostat has been put on. The oil and water are not mixed, but its still running hot and loosing water. Could it be a cracked head or gaskets or something worse.

I dont suppose the carpets wet inside?
If not your looking down the right avenue with HG or similar,
You can get blow thru where gas gets in but no signs of mayo etc anywhere.

Not sure about the carpets. What is involved if it is the head gaskets, will the heads need skimming etc...
