I guess it depends on the mileage and what's due for replacement aswell. If it's just a fairly regular service, you're looking at changing the oil and filter at least (oil wise, there's a totally huge can of worms waiting to be opened, I've used Mobil Motorsport 15W50 in mine for the Summer months and it seems fine so far, never gets trackday use though).
You could also drain, flush and refill the cooling system with a good quality antifreeze, a 50/50 antifreeze/water mix is usually about right.
I did the above on my MY97 UK Turbo, and in addition I replaced the plugs, leads and rear diff and front diff/gearbox oil while I was at it. If you're running a standard air filter, replace that aswell, or clean and re-oil any aftermarket filter fitted. You could also look into changing the fuel filter, they're not expensive and they're easy to do.
I'm hopefully sorting out a GGR cambelt and fitting that along with a new tensioner in the next few weeks too (cambelts are from memory every 3 years or 45k miles for the Classic turbo models). Also check the condition of the auxilliary belts and replace if they look suspect.
I haven't done this yet, but I want to renew the fluid in the clutch and brake systems, fresh hydraulic fluid is something which ofter gets overlooked, but can boost the performance of things like brakes if the fluid hasn't been changed in years.
That's in no particular order, but that list does contain some worthwhile maintenance points
