Regarding these, how exactly do they work. Is it a case of you turn off the ignition walk away from the car, alarm it, and the engine then is turned off by the timer when it cooled?

I have a Blitz TT on my MY99.

The theory is correct, as above, however you cannot arm the alarm whilst the timer is in countdown mode and the engine running.

I have mine set to 30 seconds, giving me enough time to close everything down, and put the disklock on etc. By the time I'm climbing out of the car, the engine switches off.

I have an MY00 European import and needed to fit my own alarm system. After some checking I decided on a Clifford Concept 300 as a turbo timer was an option with an extra 30 pounds.
I have it preset to run for a minute and can leave my car with the engine running and arm the alarm as normal. No problems with this alarm system and would reccomend it.
