Default Removing Mirror glass.....
......from a classic electric door mirror. Is there a 'knack' to doing it without breaking the glass?

yes, boil the kettle, not to make a cuppa, but to pour the water over the glass.

It softens the adhesive and backing plastic, enough to emove in one piece.

Heat them with a hair dryer also works pretty well
