I have 7 years no claims bonus. The problem is Im living in Tokyo at the moment and have no plans to come back to the UK in the near future. So how do I keep hold of my NCB?? ..do I just take a policy on my Mums Volvo or something, or is there a way to put it on hold? Would be a shame to have to come back and start from scratch!

The NCB is valid for 2 years. If you plan on staying away longer, it will probably come down to the insurers discretion.
