Faulty Gauge or Sensor?
My oil temp gauge has decided to go to the max and stay there (ignition on or off).
Is this a faulty gauge or sensor?
Best way to test?
If I remove all wires to the gauge it will return to zero. If I reconnect the wires it stays at zero until I switch the ignition on, then it rises to max and stays there.

The only sure way of testing in a situation like you describe, is substitution: a new, working, sender first, and if that doesn't cure it, a new gauge.
I assume you have already checked the wiring: that it goes where it should, and that you don't have an earth fault?,( short circuit to earth in the sender wiring?)

Edited to say: with the manufacturers help, and a good multimeter, you could also test sender output.
My guess would be sender.
