Canon 300D Question again
I know everyone enjoys these.
I was wondering - what is the maximum realistic depth of field you can use with both an 18-55mm lens and a 75 - 300mm lens when using hand held.
How many stops.

I guess you are asking what is the smallest aperture you can use, in which case it depends entirely on the available light and the ISO you select. If that is the case, then it is not camera specific at all

OK - so same idea as low light shots, so high depth of field would be easier with outdoor landscapes on a good day, than say an interior shot using tungsten lights ?

Yes, absolutely, but, having said that, depth of field is not as much of an issue indoors, as the distances involved are much smaller.
As I mentioned in a previous thread, calculating the hyperfocal distance can help
