Off-license certificates - what's the deal?

Off-license certificates - what's the deal?
I know there are new licensing charges - but I'm not quite sure of what I have to do? My off-license certificate expires at the end of November and I have to meet the new deadline of 6 August or face prosecution for illegal trading.
The forms I have received are about 25-30 pages which hardly make any sense! And the fees are absolutely ridiculous
I have the following questions:
1) Do I have to include architectural plans - will an aerial view of the shop layout be sufficient?
2) Should I just take photos of where the alcohol is and forget the plans?
3) Do I need to include an operating schedule which contains information about the running of my premises?
Anyone own an off-license, and could you please advise on what to do.
Thanks in advance
BTW, I'm applying for a personal license.

I only know a bit about it, as I drew the plans for my mate's stepmum for her pub to submit with her licence application.

Have you applied for a personal licence yet as you need a licence yourself to sell alchohol as well as a licence for you shop. THe rest of it can be done in a few easy steps by getting a licensing professional to deal with all the paper work. For a restaurant I had to supply simple details showingthe bar area and the restaurant area with a red line around the whole lot to indicate the boundries of the licenced premises.
If you don't have a personal licence yet then get one fast as you might be able to get it done in one day still as opposed to the three day course that you will have to go on very soon.
