I've got a 10lb bird, gonna roast her breast up.
Separate the skin from the breast and put loads of butter between the breast meat and skin, helps keep it nice and moist. Then put loads of streaky bacon on the top of the bird again to help keep it mosit.
Half hour without tin foil to brown her up. Then 2 and half hours with the tin foil on, basting every 30 mins.
Then after that take the foil off for the last half hour to get it browned nicely.
I then use the streaky bacon chopped up and tossed in with the brussel with some butter and chesnuts.
