Half Moon Bay - Jamaica. Its on a bay with its own reef at the entrance to the bay so keeping much of the marine life in and it has some fantastic marine life to see either snorkelling or scuba diving.
Luxury Hotels & Resorts in Jamaica | Half Moon Rose Hall | Caribbean Resort Vacations
Oh it also has a sister resort in Antigua. The one in Jamaica is more 'exclusive' and far more lively atmosphere outside the hotel where as the one in Antigua is out in the middle of nowhere but far more relaxed and quiet.

If you don't want any kids with you, I can recommend Rendezvous in St Lucia or Couples in Jamaica. Other than that, most 5* are fine. You might have to search for a good 4* though, depending where you go.

We stayed at ANSE CHASTANET RESORT St Lucia, Caribbean's romantic resort hideaway last year and loved it.

Don't go to Moon Palace it's bloody huge, more like Butlins than a 5* resort.
Check out Excellence Riviera, just up the road from Moon Palace - much smaller, much nicer - been there twice (last two holidays!)...

This place is nice - there is a roped off "nature reserve" area to snorkel in right off the beach. It is very scenic situated on a bay between two picture postcard mountains is St Lucia which is one of the most scenic islands over there. There are also surrounding tropical rainforest and volcanos to explore if you want.

Have a look at the Jade Mountain - it's owned by the same guy as Anse Chastanet mentioned by C B B. It's the newest resort in St Lucia and is meant to be spectacular. I'm going to St Lucia in March and I may well head over to Jade Mountain for a couple of days

Totally agree re Jalousie Plantation and Anse Chastenet they are fantastic - trouble is I have been to them before. Is there anywhere else in the carribean thats comparable with them?
If I had the spare cash I would consider buying one of the new villas on the Jalousie complex.
