Make a basic paste by grinding together:
Corriander seed
Cumin seed
Chilli Powder
Fresh Chilli
Garlic
Ginger
Adjust the quantities to your taste, but for mild I go for 1 teaspoon of powder and 1 fresh chilli for a 2 breast serving.
Mix that lot up in mortar and pestle or mini food processor. You can add other stuff like fenugreek or fresh corriander if you like.
Lightly fry off the spices, add the chicken.
Then either add cream, yoghurt or tomatoes depending on what you fancy, or even a combination.

John, for a quick and easy British curry, heat some sunflower/vegetable oil in a pan, fry some finely chopped onions and garlic in it until caramelised, then stick diced chicken in it. Now, some curry powder and Garam Masaala can be added to it with chopped tomatoes. Yogurt can be added to add extra flavour, but don't overdo it. You want/ask for "curry", not the masaala or a creamy Korma type dish.
Salt optional. (for health, that is)
What you really need to be sure of that you cook it all on simmering heat, not on high temperature.
My partner follows above quick-cook recipe. It tastes alright TBH. When I cook, I add cumin seeds, little cardamoms, big cardamoms, ground spices, whole spices, chillis, ginger and what not. But above recipe (as a guide) is not bad for British taste.
P.S.: Quantify spices to your taste, man.
Tip: Garnish the serving with finely chopped corriander.

Thanks Jamie.
drb5, still got the Evo (noisy, but as a reliable 400 BHP setup that steers so well it is a keeper), wondering about adding an old LS430 for when I want to be an old man. Did you sell my old Scooby and get a Mini?

I never found the Evo that noisy John...didn't you try a different backbox? Maybe a larger one would help, but not detract any performance?
LS is that big 4 door saloon isn't it? S-Type R's are kind of cheap now!![Norty](https://www.scoobynet.com/images/smilies/norty.gif)
I sold your old silver one yer, then moved to a P1 and onto a Cooper S. I didn't really need a car and the missus was doing a few miles so needed a reliable, new car with low running costs. Now she's moved closer to home we don't need to be so picky, but with a wedding to save for, we are now selling the Mini. Prolly get her an 04ish Civic Type-R and i *might* be able to get a cheap Scoob out of it all lol.
Would love to get the 2.5 back. IIRC RobertGraham on here owns it now.

Medium then
I'm not a beer and curry monster, but appreciate the flavours without getting pi$$ed or burnt to death twice by vindaloo ![EEK!](https://www.scoobynet.com/images/smilies/eek.gif)
drb5 I really shouldn't be talking V8s on a curry thread, but a 4.2 supercharged would be nice, XJR is lighter though and looks nicer, S Type R is a bit cheaper and heavier.

Well if you try this recipe and go easy on the chillis it's the most awesome Dhansak. I've made it loads of times and everyone says it's the best.
curry recipe - chicken dhansak
Remember to use their basic curry sauce recipe as well though (and start with this first).

Don't rush it, and you will have a great curry.
Good luck.
