Mary King's close is pretty cool.
Loads of great restaurants on bars.
Bannerman's in Cowgate used to do a killer Sunday breakfast - I am sure they still do!
Go for a walk alongside the river in Dean Village - very pretty.
Obviously the Castle.
Plenty of shopping - Princes Street is the main stuff, George St a little more upmarket and St James Shopping Centre of John Lewis and a sprawl of uber-upmarket stuff outside between St James and St Andrews Sq.
Also plenty of theatre, club and music options all over the city centre.
