Default Evening meal suggestions

I am looking for some evening meal suggestions that will increase our weekly eating options. I know that ideally you should eat 6 small meals a day but, in reality, we eat 3 square meals a day with some fruit for snacks in between.

Where we really seem to struggle is evening meals. Our requirements are:
  • 300-500 calories per portion...certainly no more than 600 cals
  • Meal must primarily consist of meat or fish product and must have veg
  • Meal can have starchy carbs (rice/pasta/etc) but they cannot be the key focus of the meal
  • Must be one of 5 a day
  • Must be relatively simple to make, cannot comprise 50 different obscure ingredients and take hours to make
  • Must be filling and tasty....no point in having a tiny amount to keep the calorie count down
  • In short, it should be a healthy balanced meal

Salmon and cous-cous with a peppers, cucumber and tomatoes - the salmon is marinated in lemon and ginger - yummy

Prawn salad with new potatoes or bread - some big phat prawns with loads of salad variety

Sauteed salmon with broccoli and new potatoes - splash of hollandaise sauce

Salad nicoise with some nice bread or new potatoes

Stir fry with no noodles - just loads of stir fry vegetables with fillet/tuna/prawns - quick and very yummy

Thai Green curry (using paste) chicken and rice
Thai red curry, chicken and rice
Korma, chicken and rice
Fresh stuffed pasta and sauce
Pasta, prawns and home made spicey sauce
Salmon, noodles and pak choi
Veg stir fry with noodles, or add some prawns

I used to be a chef before I moved in to IT, but I still get stuck in a rut after working a 10hr day at work!
I just picked up Jamie Olivers 30 minute meals cook book. Not a fan of his whatsoever but the meals in there are nice and quick to make, hearty and not full of expensive outlandish ingredients.

Got plenty, but they nearly always have lots of different ingredients and take time to buy and then prepare.

We are not looking for special meals for the weekend. Instead we want simple, tasty and healthy day to day options to eat during the week.

I deffo recommend the Jamie Oliver book then, It's very much 'week day teas' rather than super posh weekend dinner parties.
His show, doing the recipes in the book is on at 5 or 5.30 on a week day on 4.
