A few years ago me and girlf did a mini break to york and we stayed in the travellodge hotel right in centre.Ok its basic but has everything you needed and was clean etc, plus was right next door to a weatherspoons pub so cheap brekkies there and cheap nights out, but a nice enough weatherspoons all the same.We didn't hear any noise either at night from pub, may have been lucky maybe with room we got but in general for price it was nice.
Only downside is no parking at hotel but there is a fully covered car park a few hundred metres walk away that seemed safe and is locked up over night and was about £9 for 24 hours, this being 3 years ago, tbh if i was going again i would catch train as only a 5-10 minute walk to hotel from memory and everything in York is in easy walking distance from hotel.
All in all a nice city to spend a few days.

Royal York - some rooms are very good, some are little dated. Get a room away from the station and also the open lobby.
Park Inn - great rooms on the top floor to the worst room I have ever had in a hotel (next to the lift above the disco) - on the Micklegate mile where all the action is.
Hilton - not been in it for a few years - functional but right in the centre of town
Grange - posh, flouncy, you MUST get a room away from the roadside - small car park, fancy restaurants, a fair hike into town
Dean Court - well rated, next to the Cathedral, nice onsite bar food
Middlethorpe Hall - outside of town, flouncy, posh spa onsite
Novotel - not used it. Ten minutes from centre of town and they are usually all the same.
Marriot - out of town, dated, functional
Hotel du Vin - newish, always great character, restaurant at this one disappoints compared to others I have stayed in.
There are plenty of others but not used them...

The Churchill is a lovely small hotel just outside the city walls near the Minster (3 minutes walk). Great food, lovely bar and free parking. They also will do you a deal if you call them up and ask about staying a few nights but not wanting to pay published rates. Stayed there myself last winter and was very impressed especially for the money.
Nice to stay in a hotel that is not all corporate or budget driven.

Maybe too late, but Red Lion in upper poppleton is nice. Chalets rather than a hotel S such but has a decent restaurant and is about £5 in a taxi from the centre so is away far enough to not be disturbed.....
