You can't beat propper fresh shellfish but you need to go to the right place - looks like you didn't. Hope you're ok!

Oysters: Add a little shallot vinegar to them before eating them. The acid in the vinegar will cook them slightly.
Clams: I love these as spaghetti alla vongoles.

The one shellfish I've had problems with (and wasn't able to eat) was a live razor clam. Just couldn't manage to eat it after it made a bid for freedom across the plate.

You shouldn't touch shellfish if you think it if off. Some pretty nasty bacteria forms extremely quickly.

With meat generally you can just cook it up and you'll be fine, but shellfish no no no...

Best way to eat oysters is to batter them, no need to eat them raw. Mussles are usually pasturised not many places sell them fresh as any restautant should cook them within 24 hours of them arriving.

I am hooked on scallops which are very fresh down here in Devon. Mrs Leslie has the perfect touch at pan frying them.

Hard to beat and not too expensive.
